Percale is a plain weave: each weft thread passes over one warp thread and under the next, in a simple alternating grid. That structure produces a fabric with a matte surface, a crisp hand, and, most importantly for sleeping, consistent gaps between threads that air passes through freely. Sateen, by contrast, floats several threads over one, producing a smoother, warmer surface with far less airflow. The crispness of percale and its coolness are the same property.
